Our bulk chocolate comes from the Guittard Chocolate Company, which is located in Burlingame, CA. The Guittard Company is one of only ten chocolate makers in the US. They are also one of the few companies that work directly with small family cacao farmers before the cacao is even harvested. Guittard helps farmers produce better varieties of cacao, and I have been told that the farmers that they deal with have never used pesticides.
 
The president and CEO is Gary Guittard, who still uses family recipes and techniques handed down from generation to generation for over the last 135 years. One of the reasons we use Guittard Chocolate is the great taste it gives our products. The other reason is that Gary Guittard really cares about the whole chocolate industry from growing to production.  Gary even took on big chocolate manufactures when they were trying to get the FDA to change the formulation of chocolate to allow vegetable oil in real chocolate.
